Minced Pork and Carrots Porridge

Saturday is turning into retro healthy home cooked food day. After the Macaroni in Chicken Soup last week, Shimin attempted to replicate her Mum's Minced Pork and Carrots Porridge.

Recipe (serves 2)

1. 125g minced pork
2. 1/2 cup rice
3. 1.5L water
4. 1 large carrot or 2 small carrots (finely chopped)
5. Cornflour
6. Soy Sauce
7. Pepper

  1. Marinate pork in cornflour, soy sauce and pepper to taste for about 30 mins.
  2. Add rice and water into a pot and bring to a boil.
  3. Add carrots and boil for about another 10 mins.
  4. When the grains look about done, add in the minced pork and boil for another 5 mins.

Turned out to be quite a success! Shimin said it tastes like what her Mum does although her Mum's version is more salty.

Ahhhh! I miss this porridge. Haven't had this since i moved out. =(

My mum's version has cabbage and dried anchorvies.

didally - funny my mum never cooked porridge like this before. BTW, added cabbage in our next round... nice! :)
